Brew Day

Finally I am brewing again. I have a double brew day planned for tomorrow. Doing two of my favourites. Both great beers for summer. I am doing my American Pale Ale and my English premium bitter. Both are very simple beers but both wonderful beers when they come out right. Actually I have not managed to mess up either of these two in all of the times I have brewed them. Both are pretty quick turn around so may even be ready before Christmas.

I think I have the recipes for these two up already but the APA is a Munich 1 base with just a little wheat. It is Amarillo from start to finish with plenty of finishing hops and even some dry hopping. The bitter is just ale malt(Marris Otter in this case) with a touch of medium crystal. One hop again on this with EK Goldings right through. Also some dry hopping on this one. Both made with Wyeast 1318 London III. So the APA will come out a lot fruitier than a typical APA but that is the way I like it. I’m not a fan American Ale yeasts that really are just emulating lagers in most cases.

Biere De Garde Bottled

I finally got around to getting this in the bottle. Now I may even get around to brewing next weekend. I bulk primed at a rate that was at the bottom end of the range for the style. However, when filling the bottle it was apparent there was more dissolved C02 than expected. Now I am a little concerned this will leave me with an over carbonated beer. By the time I realised I already had the sugar into solution so I couldn’t go back.

The beer was tasting very good s oI am really hoping that this does not ruin it. It is also my beer for the Christmas case so I would hate to give everyone something that I ruined with a silly mistake. Too late to worry about it now though.

A ridiculous beer

I need to use up some malt and some hops so what choice do I have but to make a ridiculously large beer with a crazy amount of hops. Actually it is not that large, will only come out at about 8%. There is an unfeasible amount of hops in this beer though This just had to be done as I have a heap of hops to use up and I want use up some malt as I have some Marris Otter on the way. Anyway here is the recipe:
