Bière de Garde yeast smacked

That’s it, I have committed to brewing next weekend. The yeast is smacked and sitting in a nice warm spot to get it going. It is less than two months sine manufacture so I’m hoping it will be blown up by tonight. I plan on building a really big starter for this one. I want to have a high pitch rate so there is a lot of yeast in the beer. The BDG I have tried and what I am aiming for is very yeast driven. What better way to make a yeast driven beer than with lots of yeast? From what I have read high pitching rates should suit this style. It will also go though a reasonable lagering before bottle conditioning so having a large amount of yeast shouldn’t hurt. I am also thinking there will be a few people interested in a culture of this yeast as it is a reasonably rare one.

In other news. The first bottle of porter has gone into the fridge this morning. I will give that the taste test this evening.

Summer Ale Bottled

I now have the second attempt at what I am calling a summer ale in the bottle. I ‘m trying to make a nice drinkable middle of the road beer that will appeal to people who like good craft beer but not be a challenge to people that are not into it. A gateway drug I guess. This beer is an ale but it has been made with a very clean yeast and has been given some lagering so it should be fairly clean tasting. It was bittered with Magnum and had a small 10 minute addition of Hallertau to give it a hint of hop flavour. The malt bill was mostly local Vienna malt, German Munich and German Pils.

I now have all my fermenters empty. I don’t think I have been in this position, except for when I moved house, for some time. It is a long weekend next weekend. It may be time to brew the Bier De Gard and possibly have a brew day. Must check with the boss to see if we have anything on next weekend. I may even do two brews and get my bitter for the Christmas Case done though that beer is at it’s best when really fresh so I may hold off.

I’m going to give the porter it’s first taste from the bottle tomorrow so I’m hoping it has conditioned well enough not to be awful for “The Mash Paddle”.

Porter Bottled

I bottled my Porter today. Hopefully it can condition in time for the “Mash Paddle” competition. On the last sampling I had it had a real roast quality to it. This has become significantly reduced over the last couple of weeks. It has great chocolate and and coffee flavours and what seems to have a nice depth of malt. I want to wait til it has carbonated before making real judgements but I think I have made a pretty good beer with this one.

I think it may be a bit under done for the competition as it will only have been in the bottle for a little over two weeks when judged. I would have referred to have it in the bottle for a month or two but I left it too late so I have to live with the situation. I have a couple of bottles conditioning in a nice warm spot so I will have a sample next weekend and see how it is doing.

Microsoft plumbs new depths. What a stupid idea is all I can say. Allow you to share your music but only on their conditions. Wrapping my music in their drm makes the whole wireless sharing thing incredibly less valuable. I think I will just share my music the way I want to. Thanks all the same Microsoft.

The other part of this is that by adding their drm on top of whatever is already there they pay no respect to the way the music was originally licensed. As it says in the article this would break a Creative Commons license and many others I imagine. I’m sure there will be enough disclaimers in the license that Microsoft could never be held accountable for what they have done though.

They still don’t annoy me as much as Telstra does though.
